Acai Berry Bowl

You will need:

3 ½ ounces of organic frozen acai berry. You may use Sambazon acai berry smoothie packs or Sambazon acai berry sorbet.
1 cup organic frozen berries
½ cup organic unsweetened coconut milk
For toppings you can use raw honey, fresh fruit and home made granola

Blend the acai berry packs or sorbet, frozen berries and milk together to make the bowl. Pour into the bowl and top with your favorite toppings. You can also add nuts, hemp seeds or chia seeds as toppings. Enjoy!

 

Chocolate Chia Seed Pudding

You will need:

1 ½ cups organic unsweetened almond milk
1/3 cup organic chia seeds
¼ cup organic cacao powder
4 Tablespoons organic maple syrup
½ teaspoon organic cinnamon
½ teaspoon organic vanilla extract
¼ teaspoon Celtic sea salt

Directions:

Whisk well to combine and place in the refrigerator, covered to come to a creamy consistency overnight. It will be ready the next morning.

 

 

Pumpkin Spice Smoothie

You will need:

1 medium organic banana, frozen
½ cup organic vegan yogurt
2/3 cup organic pumpkin puree
½ cup organic almond or coconut milk
2 Tablespoons organic vanilla agave nectar
½ teaspoon organic vanilla extract
¼ teaspoon organic ground cinnamon
¼ teaspoon organic pumpkin pie spice
1 cup ice

Directions:

Blend well and enjoy!

 

Perfect Gluten-Free Blueberry Bars

You will need:

Crust

1 cup organic macadamia flour
1/3 cup organic coconut flour
¼ cup organic coconut oil
1/3 cup organic maple syrup
4 Tablespoons water
½ teaspoon baking soda

Filling

12 ounces organic blueberries
1 teaspoon arrowroot powder

Topping

½ cup organic brown rice flour
3 Tablespoons organic coconut oil
1 teaspoon organic ground cinnamon
¾ cup organic coconut sugar

Directions:

Preheat your oven to 350 degree and line an 8 inch baking pan with parchment paper. In a medium mixing bowl mix crust ingredients together well. Create an even crust by pressing this mixture into your baking pan.

Mix the blueberries and arrowroot powder in a bowl. Pour the mixture onto the crust and spread evenly.

In a medium bowl, mix the topping ingredients until they begin to clump together. Sprinkle the topping over the blueberries. Bake for 35-40 minutes. Cut into bars and store in the refrigerator.

If you would like to make your own vegan milk you don’t require a high-powered blender. Just soak ½ cup of almond nuts overnight and add them to filtered water. Puree and strain the milk. With the nutrient rich ingredients you will find that these recipes create a substantial breakfast that you want to make regularly.
